Out of all of the shows below, I'll be adding Castle to my list of favorites to record. My wife watches Dancing with the Stars so I'll probably check out the trainwreck that should be Steve Wozniac - or he could prove me wrong.

Dancing With the Stars (8pm on ABC - Avail in HD) Season 8 Premiere with Belinda Carlisle, David Alan Grier, Shawn Johnson, Lil' Kim, Gilles Marini, Ty Murray, Steve-O, Denise Richards, Lawrence Taylor, Chuck Wicks, and Steve Wozniak partner with dance professionals to compete. Anyone want to bet on how many days before Wozniak is "kicked off the island?" I'm betting two.
Castle (10pm on ABC- Avail in HD) A series premiere on ABC. The story centers around Richard Castle (Nathan Fillion from Firefly and Dr. Horrible) is a successful murder-mystery writer who has just killed off his main character. However, it seems one of his fans liked his books just a bit too much when a copycat murderer starts running around killing people as described in Castle's books. In an interview Fillion recently did, he called his "Castle" character a genuine "douche". I'll be watching this show mostly because of Fillion. Not as good as a never to be had, second season of Firefly, but I'll take what I can get.

Chopping Block - (8pm on NBC) - Series Premiere of yet another reality cooking show. The high-profile chef Marc Pierre White will host a competition that takes place in the restaurants of New York City. Each week, the contestants will have to completely renovate, organize and develop a signature dish for a restaurant. They winners will have the chance to open their own restaurant.
